Instructions
Step 1
Pre-heat oven to 425 degrees
Step 2
Pan sear chicken on both sides for 2 minutes.
Step 3
In a large bowl stir 2 Tlb olive oil, 1 1/2 tsp salt, tomato paste, turmeric, paprika, pepper, ginger, cinnamon and nutmeg. Add chicken. Place on rimmed baking sheet.
Step 4
In same bowl, toss together carrots, potatoes, 1 Tbl olive oil and 1/2 tsp salt. Arrange vegetables on sheet pan with chicken. Add lemon quarters to pan. Roast 20 minutes.
Step 5
Remove pan from oven, check doneness of chicken, scatter dates and olives around chicken and veggies. Drizzle with more oil and return to oven until chicken is done.
