Instructions
Step 1
Heat the olive oil in a large pan on a medium to high heat and add the cinnamon.
Step 2
Let it sizzle for a minute to flavour the oil before adding the chicken. Brown the chicken, then remove from the pan and set aside.
Step 3
Reduce the heat to low, add the onions and fry the onions for 10 to 15 minutes. This makes them much more flavoursome; if you are short of time you can cook them on a higher heat for less time but it won’t be as tasty.
Step 4
Add the garlic, ginger, chilli powder, garam masala and curry powder and cook for a further minute. Add the chicken back to the pan with the chopped toma-toes, salt and apple cider vinegar and simmer for 15 minutes.
Step 5
Add the natural yoghurt and simmer for a further minute before serving and gar-nish with fresh coriander.
