Instructions
Step 1
Cut pork spare ribs into 3-5cm across small pieces; Slice spring onion, ginger; Prepare and chop carrot and corn into smaller pieces.
Step 2
Put pork spare ribs in a pot filled with water, add in sliced ginger, spring onion, cooking wine and Szechuan peppercorn, bring water to boil for 5-10 minutes.
Step 3
Remove pork spare ribs from the broth to drain. Heat up some cooking oil in a pot, add in sliced ginger and spring onion white, and further add in pre cooked pork spare ribs to stir fry for a couple of minutes until they are golden brown. Add in water and white vinegar, bring to boil.
Step 4
Once broth starts boiling, let cook for 10 minutes, remove sliced scallion and ginger, add in chopped corn and carrot to mix, continue simmering on medium heat for 1hour. Season broth with salt/black pepper and spring onion. Serve warm.
