Ingredients
6 servings
1 TablespoonsOlive Oil
once or twice around the pan
6boneless skinless chicken thighs
Sea Salt
Pepper
fresh cracked, seasoned to taste
3fresh Garlic cloves
minced
2 teaspoonsitalian seasoning
2 teaspoonsthyme
1 teaspoonsRed Pepper Flakes
seasoned to taste and series heat level
fresh basil
chopped
1 cupChicken Broth
Stock, or Better than Bullion and water
½ cupHeavy Cream
use to desired thickness
1 x 7 ozSun-dried Tomatoes
chopped
fresh spinach
for taste/nutritional value
½ cupparmesan cheese
freshly grated
Parmesan Cheese
to sprinkle on top
Pasta
Cooked, or other carb as desired
Instructions
Step 1
In a large skillet , heat olive oil for 2-3 minutes on medium-high heat (or til pan sizzles if touched with water droplet).
Step 2
Season chicken with salt & pepper to taste
Step 3
Add Italian seasoning.
Step 4
Lightly sear chicken to a golden color, about 3-4 minutes per side. (Chicken with finish cooking in another step).
Step 5
Transfer chicken to plate.
Step 6
Return skillet to medium heat. Add another tablespoon of olive oil (once around the pan) and heat.
Step 7
Add fresh minced garlic to pan and cook for 1-2 minutes.
Step 8
Add chicken broth, Crushed red pepper, & Thyme. Cook for 1-2 minutes or til sauce reduces slightly.
Step 9
Add heavy cream.
Step 10
Cook for 2-3 minutes, stirring often until sauce thickens.
Step 11
Add sun-dried tomatoes, freshly chopped basil, and freshly grated parmesan cheese. (Add spinach if desired). Stir until cheese melts and sauce is thoroughly mixed.
Step 12
Return chicken to skillet and cook chicken in sauce for an additional 2-3 minutes per side, until chicken is cooked through.
Step 13
Spoon sauce over choice of carbs (pasta, potatoes, risotto, etc.) and top with sliced chicken.
Step 14
Spoon more sauce on top of chicken.
Step 15
Sprinkle with freshly grated cheese to finish.
