1 lbbeef
I used flank steak
Skinless Chicken
1green bell pepper
large, sliced
1red bell pepper
medium, sliced
1yellow bell pepper
medium, or orange, sliced
1onion
large, sliced
lemon zest
optional
2 TbspLemon juice
to taste
1garlic
large, minced, optional
3 Tbspcoriander
chopped, optional
2 Tbspoil
1 Tbscornstarch
1 Tbspaprika
2 tspcumin powder
1 tspred chili powder
or cayenne powder
1 tspgarlic powder
1 tspblack pepper
1 tspsalt
1 tsponion powder
¼ tspsugar
Instructions
Step 1
Mix Fajita seasoning (or use store bought)
lemon zest
Lemon juice2 Tbsp
garlic1
coriander3 Tbsp
oil2 Tbsp
cornstarch1 Tbs
paprika1 Tbs
cumin powder2 tsp
red chili powder1 tsp
garlic powder1 tsp
black pepper1 tsp
salt1 tsp
onion powder1 tsp
sugar¼ tsp
Step 2
Rub 2Tbs of fajita seasoning onto meat. Allow to sit for 30 minutes to allow seasoning to absorb and meat to come to room temperature. *Save some of the seasoning for the veggies.
Step 3
Heat pan with 2Tbs oil on medium high heat for meat, (medium-low for chicken). Cook 5-6 minutes each side (more if you like well done). Remove steak from pan and allow to sit for 15 minutes before slicing against the grain.
Step 4
Slice onions and peppers. In the skillet that you cooked the beef, add the onions and pepper and saute on medium heat until they start to become tender. Sprinkle with a little more fajita seasoning, salt and black pepper to season the veggies.
Step 5
You can add the sliced meat and any juices from the meat into the pan or have two sepwrate plates
Step 6
Serve with warm tortillas, shredded cheese, shredded lettuce, sour cream, diced tomatoes, Avocado Or with rice and Avoca
