Step 1
Heat 1 tbsp of sesame oil in pan and add vegetables. Sauté for 8-10 minutes to get a sear on them and add 2 tsp of soy sauce. Once they are soft but still a little crisp remove and put in a plate aside. Using same skillet add remaining tbsp of sesame oil. Then add garlic and strips of seitan. Brown on both sides. This should take 1-2 minutes per side. While seitan is cooking, in a small bowl whisk together the ginger, 1/4 cup soy sauce, rice wine vinegar and maple syrup. Once the seitan is nice and brown add vegetables back to pan and pour sauce over. Toss to coat everything and sauté another minute. Add sesame seeds and toss. Top with green onion.
