Instructions
Step 1
Prepare the onion, carrot, tomato, and lettuce and sort into small bowls or containers for serving.
Step 2
Either fry the fish fingers in a frying pan with a little olive oil or cook them under the grill or in an air fryer as you like. Just keep turning them so they don’t dry out.
Step 3
Fry the onion and capsicum for 5-10 minutes, or until caramelised
Step 4
Scoop out the avocado. Add the lime juice and mash into a course paste with a little salt.
Step 5
Smother the tacos with the avocado. Add the fish fingers and scatter onion, tomato, lettuce, and carrot as desired
