Step 1
1. Heat oil in large skillet over medium-high heat. Add bell peppers and onion; cook and stir 5 minutes or until vegetables are tender.

2. Bring broth to a boil in small saucepan
over high heat.

3. Stir in couscous, garlic, salt, oregano and cumin; mix well. Remove from heat; cover and let stand 5 minutes. Fluff with fork.
Step 4
4. Serve vegetables, eggs and beans over
couscous; top with tomatoes and cheese,
if desired.
