Ingredients

210mlcan coconut cream
2 tbspsgreen curry paste
4chicken thigh fillets
cut into pieces
3potatoes
cubed
6Kaffir lime leaves
torn into strips
1 bunchBok Choy
leaves seperated
2carrots
diced
3stalks celery
sliced
400mlcan coconut milk
To serve
Instructions
Step 1
Pour the coconut cream into a pot over medium to high heat.
Step 2
Bring to the boil and then reduce heat. Simmer for 5 mins or until cream almost seperates.
Step 3
Stir in curry paste and cook for a further 2 mins or until aromatic.
Step 4
Add the chicken, Kaffir lime leaves, vegetables, and coconut milk and stir.
Step 5
While the sauce mixture is cooking cook the rice as per packet instructions.
Step 6
Reduce to a low heat for 10 mins stirring occasionally, until the chicken is cooked through.
Step 7
Remove from heat. Spoon the curry into bowls and top with the remaining basil and sliced red chilli.
