50gcoriander seeds
25gcumin
5gfennel
0.5cinnamon stick
broken up
2cardamom pods
3cloves
100mlvegetable oil
400gonions
big, thinly sliced
1.5 bulbsgarlic
whole, thinly sliced
4 stalkslemongrass
trimmed and bruised
3red chillies
finely sliced
10 stalkscurry leaves
1pandan leaf
cut into 1cm strips
1cinnamon stick
1 Tbspchilli powder
depending on your spice tolerance
½ tspground turmeric
4 Tbspcurry powder
Sri Lankan unroasted
5 Tbspcurry powder
black pork
1.5kgpork
with some fat through it, use a mix of belly and shoulder, or roasting pork, roughly cut into 1.5cm cubes
½ cupwater
½ cuptamarind water
mix 40g tamarind + 150ml water, allow to sit then squeeze and use only the liquid
