Step 1
Preheat the oven to 200°C and line a baking tray with a sheet of greaseproof paper. Lay the cod on top, season with salt and pepper then brush the top of the fish with the half of the coconut oil. Sprinkle over half of the curry powder then bake for

12-15 minutes or until just cooked through.
Step 3
Meanwhile heat the remaining coconut oil in a frying pan over a high heat, add the onion and fry for 5 minutes until caramelised. Add the ginger and chilli and fry for a couple of minutes until soft. Add the tomatoes and remaining curry powder, fry for a minute then add the lentils. Pour over enough boiling water to cover then simmer gently for 15-20 minutes or until the lentils are soft.
Step 4
Remove from the heat, stir in the spinach and lemon juice then season with a pinch of salt. Spoon into a serving bowl, scatter over the pumpkin seeds then top with the cod.
