Ingredients
2 servings
olive oil
1zucchini
medium, diced
0.5red onion
diced
1red capsicum
diced
¼ cupcorn kernels
1stalk celery
diced
2cloves garlic
minced
1can of Refried Beans
1 tsphot sauce
optional
1 tspchilli powder
½ tspcumin
1 Tbsplime juice
salt
to taste
black pepper
to taste
tortilla chips
to serve

Instructions
Step 1
Heat olive oil in a skillet over medium heat. Add the zucchini, capsicum, onion, celery, corn and garlic. Cook until veggies are tender, about 7-8 minutes.
Step 2
Stir in refried beans, hot sauce, chilli powder, cumin, salt and pepper. Cook for a further 2-3 minutes until heated through. Remove from the heat and stir through the lime juice.
Step 3
Divide the skillet dip between two bowls. Top with choice of avocado, salsa, jalapenos, shredded cheese and coriander. Serve with tortilla chips.
