Instructions

Step 1
In a large bowl add chopped potatoes, add 10g of the seasoning, olive oil and season. Cook in Airfryer for 15-18 mins at 180C.
Step 2
Heat olive oil in a pan, add mince and the remaining seasoning, season and cook over high heat until just browned. Pour in stock and simmer for 10 mins until liquid has evaporated.
Step 3
Make pico do gallo & guacamole in 2 separate bowls.
Step 4
In a bowl serve potatoes, taco mince on top, sprinkle with cheddar cheese, add pico Di gallo, guacamole, sour cream and some fresh coriander.
