Step 1
Press the tofu with either a specific tofu press (like this one) or place it inside a clean tea towel and sit a large heavy item on top for 10 minutes (a skillet or couple of books would work). Alternatively you could skip this stage and simply squeeze some of the excess water out with your hands as you place it into the pan (you will need to cook it a little longer to evaporate some of the liquid in the tofu). In a frying pan add the onion and mushrooms and cook for 6 minutes Add the garlic and cook for a further 1 minute. Break the pressed tofu apart into small pieces and add it to the pan. Allow this to fry for a few minutes, until all the excess moisture has evaporated. Add the spinach and allow it to wilt. Add the turmeric, black pepper and tomatoes to the pan and cook for 1 minute. Add the soya sauce and cook for a further 1 minute Toast the bread (optional) and then spread the avocado on top. Serve the scrambled tofu on the bread and top with sriracha (optional).
