Instructions

Onion, Ginger, Garlic Paste

Step 1
Cut all into slices, mix with 1 cup water, then mince in a mixer.

Spinach Paste

Step 2
Fresh spinach, boiled and blended with water in a mixer

Nutmeg, cashew nut, coconut, mace, and musk melon seeds paste

Step 3
Add the ingredients and mince in a mixer

Main

Step 4
Heat the pan, add 2 spoons of peanut oil, and let it heat for 10 seconds.
Step 5
Add onion, ginger, and garlic paste (see earlier base prep). Stand slightly back when adding—it can splatter.
Step 6
Add whole spices: nutmeg, star anise, cinnamon, bayleaf, black pepper, green & black cardamom, cloves. Stir for 10 seconds until aromatic.
Step 7
Add 1 spoon of tomato paste and stir well.
Step 8
Add ground spices: Turmeric Red chili Salt Coriander powder Garam masala Kasuri methi Stir until mixed.
Step 9
Add the boiled vegetables (potatoes, carrots, beans, peas). Stir gently to coat them in the spices
Step 10
Add 2 spoons of the nutmeg, cashew, coconut, mace, and musk melon seed paste
Step 11
Add 2 spoons of spinach paste. If the curry isn’t fully green, add 1 more spoon. Pour in 1 cup of water and stir well.
Step 12
Add fresh cream, stir, and season with more salt if needed.
Step 13
Finish with a handful of fresh coriander
