Tofu
Smoky marry me cream sauce
3 Tbspraw cashews
soaked for 10 minutes
55gfirm tofu
10 ozpasta sauce
or marinara
¼ tspsalt
1 tspsmoked paprika
1 Tbspnutritional yeast
½ cupwater
plus more as needed
Spinach ricotta filling
225gfrozen spinach
thawed and lightly squeezed
55gfirm tofu
½ cupvegan mozzarella
2 tspitalian seasoning
2 Tbspsun-dried tomatoes
chopped
1 tspgarlic powder
1 tsponion powder
½ tspred pepper flakes
½ tspsalt
½ tspblack pepper

Instructions
Step 1
Prep the tofu. Press the main block of tofu for at least 15 minutes, then cut it into roughly 12 slices. The smaller amounts of tofu used in the sauce and filling don't need pressing.
Step 2
Make the creamy sauce. Blend the cashews, 2 oz tofu, marinara, salt, smoked paprika, nutritional yeast and ½ cup water until creamy. Let it rest for a couple of minutes and blend again. If it's too thick, add another 2–3 tbsp water.
Step 3
Make the spinach filling. Put the spinach in a bowl and crumble in the 2 oz tofu. Add vegan mozzarella, Italian seasoning, sun-dried tomatoes, garlic powder, onion powder, red pepper flakes, salt and pepper. Mix everything together well.
Step 4
Heat oven to 400°F / 205°C.
Step 5
Assemble. Spread some creamy sauce over the bottom of an approximately 8 × 10-inch baking dish. Add some mushrooms/vegetables if using, followed by a layer of tofu slices. Leave a little space between the slices.
Step 6
Spread some spinach filling over the tofu. Add another layer of sauce, veggies, tofu and spinach filling. Continue layering depending on the size/depth of your dish. Finish with dollops of the remaining sauce.
Step 7
Top it. Sprinkle with breadcrumbs, a little extra black pepper/red pepper flakes and vegan parmesan if using. Drizzle with olive oil.
Step 8
Bake for 25–30 minutes. After the first 15 minutes, loosely cover the top with parchment paper so it doesn't dry out or brown too much.
Step 9
Let it rest for 5 minutes before slicing. You can serve it alone, with toasted sourdough, or over pasta.
