200grice
2 tspvegetable oil
1red onion

4 clovesgarlic
400gchicken breast
400ggreen beans
2bell peppers
50gsun dried tomatoes
80mlsoy sauce
2fresh chili
240mlwater

Peanut sauce
Instructions
Step 1
Heat the oil in a pan and add the chicken. Heat for around 5 minuets untill the chicken has browned off.
Step 2
Add the onions and garlic to the pan and cook on for around 5 minuets or until the chicken and onions are cooked through.
Step 3
Transfer everything in the pan to a bowl and return the pan to the heat
Step 4
Add the water and beans to the pan and cover on a medium heat. Leave the beans to simmer for around 7 minuets.
Step 5
While the beans are cooking blend all the ingrediants for the peanut sauce in a small blender until smooth. If the sauce is to thick to easily pour you can add a little more water at this point.
Step 6
Add the peppers to the pan with the beans, pop the lid back on and simmer on for a further 5 minuets. You should have no more than 2 tsp of water left at the end, any more than this will need draining.
Step 7
Add the chicken, onions, garlic from the bowl back to the pan along with the tomatoes, soy sauce and chillis. Heat all of the ingrediants through before serving.
Step 8
Serve the rice and chicken with topped with the peanut sauce.
