Instructions
Step 1
Blend onion into a paste and fry in oil until it changes colour
Step 2
Add ginger and garlic pastes and fry for a couple mins
Step 3
Add chicken and fry until it changes colour and starts getting golden too (about 8-9mins on high heat)
Step 4
Soak handful of almonds in some water and peel them (to do this quickly just add boiling water and after a few mins you should be able to peel the skin off)
Step 5
Blend almonds, milk, yoghurt, green chillies & spices (salt, pepper, cumin and coriander powder) into a paste and pour it over the fried chicken
Step 6
Add the paste to chicken and cook on high heat and keep mixing until the mixture starts to thicken and stick to the chicken and oil comes up (10-12mins)
Step 7
Top with corriander and green chillies and cook on low heat for couple mins (the salan itself isn’t too spicy due to the milk and yoghurt but if you like it spicyy, add more green chillies on top at this stage and cut a slit in the middle). If you think theres too much oil, you can scoop out the excess at this stage too but if you use less oil to begin with, the salan won’t taste as good.
Step 8
Serve it with naan or roti
