Beets and pasta aren’t usually two ingredients that are seen next to each other, and yet they’re perfect for one another. This dish is decadent yet earthy, rich yet simple, and perfect for any winter date-night a la casa.

to start, add more to taste

2 tablespoonsbeet juice
reserved, to thin start with

crumbled goat cheese
amount dependent on servings, start with 1 tablespoon per person

olive oil
to garnish

parsley

honey

or walnuts, to garnish
