Haitian Red Beet Salad

This a very traditional Haitian salad. A recipe that is very dear to my heart. A bowl of color and flavor.

Instructions
Step 1
Scrub everything well and put in a pot filled with water tell everything is covered with water and bring to boil for about 30-40minutes or until well cooked. It’s ok to let the eggs boil with the beats that long even if eggs don’t normally take that long to cook.
Step 2
While the vegetables and eggs are cooking we will begin to prepare are sauce or dressing in this case lol.
Step 3
To begging with chopped 2 medium size onions and 2 green peppers and 2 tomatoes into small square chunks. Then sautée everything together in a skillet with 1/2 cup of butter. Once everything is sautéed add 1/4 cups of flour. Mix it will with veggies until it absorb there’s no flour showing. Then add 2 1/2 T. Complete seasoning,1 tsp. Black pepper, 1 tsp. Salt 1 1/2 tsp garlic powder and 2 1/2 cups milk for the liquid. Reduce the heat to low and mix will constantly until thick gravy is made. Once your gravy is done set aside to cool. If your vegetables are cooked go head peel and chopped everything as seen in the video above. Then putt everything in a bowl and I like to add a can of green peas and a can of corn if I have it. Then pour your sauce over everything and mix well. So there you have it. Enjoy.

For those that don’t know this is a very traditional salad for Haitian parties. You see it at every wedding or if they make what we call manje fete ( party food). Normally it’s made with a mayo base sauce. But I personally don’t care for the Mayo so I make my own sauce. More and more now days people are making their own sauce. Over all it’s a delicious salad that add beautiful color to your plate. So go head make it and think of our Haitian tradition as you enjoy each bite😀.
