3cloves of garlic
fresh ginger
4scallions
400 grchickpeas
400 grlentils

15cherry tomatoes
1 Tbspoil
baby spinach
400mlcoconut milk
0.5lime
Juice of
2 Tbspcurry powder
2 tspcumin
1 tspsalt
1 Tbsptamari
1 tspblack pepper
To Serve
Instructions
Step 1
Peel and finely chop the garlic and ginger. Finely chop te scallions, drain the chickpeas and lentils and rinse thoroughly. Chop the cherry tomatoes In half.
Step 2
Heat the oil for 1 minute over a large saucepan over a high heat. Add the garlic, ginger and scallions and cook for 1 minute. Add the cherry tomatoes and cook for another two minutes. Add the remaining Ingredients and bring to the boil. Stirring occasionally to make sure it doesn’t stick to the pan. Leave to simmer for another 2 minutes and then take off the heat.
Step 3
While the Dahl is simmering cook the pita breads
Step 4
Garnish with some coriander and chili flakes and serve with some rice or couscous
