Chicken burrito bowl with homemade chipotle sauce

Instructions

Chicken & veggies

Season the chicken with taco seasoning. I used almost a full packet of taco seasoning! Add avocado oil to a skillet on medium high heat. Once hot add the chicken and cook for 5-7 min per side until fully cooked. Once finished you’ll let it rest for a few min then slice into bite size pieces.

Once the chicken is out of the pan I like to add the sliced onion and bell peppers to the same pan (less dishes + flavor from the chicken!!) and sauté for about 7-10 min, until almost soft! I like the veggies to still have a bit of a crunch.

Chipotle sauce:

• 1/2 cup plain Greek yogurt

• 1 pepper in adobo sauce + 2 tbs of sauce

• Juice of 1/2 lime

• 1 handful of cilantro

1 tbs minced garlic

Add all sauce ingredients to a blender and blend until smooth.

Guacamole 🥑

• 3 small avocados

• Juice of 1/2 lime

• 1/4 red onion diced

• About 6 sliced grape tomatoes

Sprinkle of salt, pepper, & garlic powder

This is how I like to make it! But make it however you’d like. 🫶🏻

TIME TO ASSEMBLE!!! to a bowl add in 1/2 cup cooked rice, cooked chicken, shredded lettuce, peppers + onion mix, salsa, guac, & top with the chipotle sauce! ENJOY!!!! 🤤🫶🏻🙌🏻
