Yam infused with lemongrass and turmeric

Instructions

Step 1
Peel yam
Step 2
Cut into chunks
Step 3
Place in pot of boiling water

To the pot add lemongrass, onion, turmeric, star anise and cinnamon stick

Boil for 20 minutes
Step 6
For infused oil, heat the oil in a small pot
Step 7
Place 20 grams onion, turmeric, a few curry leaves, coriander leaves in coconut oil and allow to infuse
Step 8
To assemble, slice yam and place 4 pieces on plate

Season
Step 10
Drizzle infused oil over yam
Step 11
Garnish with fresh coconut and a sprinkle of paprika and fried curry leaves
