Sweet and sour pork stir-fry

Instructions

Step 1
Cook the rice

add the flour to a bowl

drain the pineapple rings, reserving the juice

add the juice to the flour and whisk well until the mixture is smooth

add the soy sauce, ginger, honey, tomato puree, garlic and 4 tbsp water

mix until fully combined

cut the pineapple rings into chunks

heat half of the oil in a wok over a high heat

fry the pork 4-6 mins until lightly golden and cooked thorugh

remove from the pan and set aside

add the remianing oil to the pan and fry the onion and peppers for 3-4 minutes

add the pineapple, sauce and cooked pork back to the pan

simmer for 4-5 minsuntil the sauce has thickened

add a splash of water is the sauce has thickened too much

serve on top of the rice and sprinkle with sesame seeds
