Ingredients
6 servings
1 tablespoonolive oil
1 cuplentils
1onion
medium, chopped
1bell pepper
chopped
½ teaspoonsalt
¼ teaspoonpepper
3cloves garlic
minced
2 teaspoonsitalian seasoning
2 tablespoonstomato paste
2 x 25 ouncesmarinara sauce
jars
4 cupsvegetable broth
1 cupwater
8 ounceswhole wheat lasagna noodles
broken into bite-size pieces
2 cupsfresh spinach
packed, chopped
½ cupshredded mozzarella cheese
Ricotta
Parmesan cheese
for serving
Instructions
Step 1
Heat olive oil in a large pot or Dutch oven over medium-high heat. Add onion, and bell pepper and cook, stirring often, about 5 minutes. Season with salt and pepper.
Step 2
Stir in the garlic, Italian seasoning and tomato paste. Then, stir in the marinara sauce, broth, lentils and water. Increase heat to high and bring to a boil.
Step 3
Stir in lasagna noodles and reduce heat to a medium boil. Cook for 10-12 minutes or until noodles are cooked al dente, stirring occasionally.
Step 4
Remove from the heat and stir in the chopped spinach.
Step 5
Sprinkle on mozzarella cheese. Serve with ricotta and/or Parmesan cheeses, if desired.
