Instructions
Step 1
Heat 4 tablespoons of olive oil in a large pot over medium heat.
Step 2
Add 2 cup celery,2 cup white or yellow onion,2 green bell pepper,2 cup carrots
Step 3
Saute until slightly tender.
Step 4
Stir in 4-6 cloves garlic and cook until fragrant.
Step 5
Pour in 8 cups chicken broth.
Step 6
Stir in 28 oz can diced tomatoes and 1 head of cabbage.
Step 7
Bring to a boil and then reduce heat to a simmer.
Step 8
Cook until cabbage is tender.
Step 9
Stir in seasoning
Step 10
Taste broth and adjust seasoning if needed.
Step 11
Serve and enjoy!
