Ingredients

1 cuptomato pulp
¼ cupvegetable broth
¼ cupdehydrated tomatoes
2 tablespoonstomato concentrate
1 tablespooncider vinegar
1 teaspoonsmoked paprika
1 teaspooncoconut sugar
½ teaspooncumin
½ teaspoongarlic powder
½ teaspoonsea salt
¼ teaspooncinnamon
Scrambled Tofu
3 tablespoonsolive oil
1red pepper
sliced
1red onion
finely sliced
3garlic
cloves, finely chopped
500gfirm tofu
2 tablespoonsoregano
2 tablespoonsnutritional yeast
2 teaspoonssea salt
2 TeaspoonsSmoked Paprika
2 teaspoonsturmeric powder
1 teaspooncumin powder
½ teaspoonground black pepper
To Serve
Instructions
Sauce
Step 1
Add all the ingredients of the sauce in a blender or processor and grind for 1 minute, until a homogeneous sauce is obtained. Reserve.
Scrambled Tofu
Step 2
Wash the tofu very briefly under running water. Drain well and dry with kitchen paper or a clean kitchen cloth.
Step 3
Crush the tofu with your hands into a large bowl, until it is reduced to small pieces. Add all the spices and condiments and mix well to wrap.
Step 4
Pre heat oven at 180 °C
Step 5
In a very wide frying pan, heat the olive oil over medium-high heat.
Step 6
Add the red onion, pepper and garlic and sauté 3 to 4 minutes, or until the vegetables are tender and begin to caramelize slightly.
Step 7
Add the spicy tofu and mix well. Let it cook over high heat, stirring occasionally, for 10 minutes, to cook the spices well and toast the tofu and vegetables.
Step 8
Divide the tofu preparation into portions and fill 8 to 10 tortillas. Roll the tortillas to form the enchiladas and align them on a platter that can go to the oven. Cover the enchiladas with the sauce and place in the preheated oven at 180 °C for 20 minutes.
Step 9
Serve with cashew cream, pear-avocado, red onion, jalapeños and chopped coriander.
