Instructions

Step 1
Place the eggs in a bowl and lightly beat them. Stir in the tomato, coriander and green chilli until well combined. Season well.
Step 2
Melt the oil in a medium non-stick frying pan over a gentle heat. Add the onion and cumin and stir-fry for 2-3 minutes until softened.
Step 3
Stir in the turmeric, then pour in the egg mixture and scramble over a gentle heat for 1-2 minutes, or until cooked to your liking.
Step 4
Remove from the heat and serve.
