Instructions
Step 1
Heat the oil in a saucepan over a medium heat, add the onion and star anise and cook for 3 minutes.
Step 2
Add the garlic, carrot, pepper, celery and chillies and cook for 5-8 minutes or until they start to soften slightly. Remove the star anise.
Step 3
Add the herbs and dried spices, then the tomatoes, tomato paste, beans and lentils. Cook for 1 minute, then add the water or stock and stir well. Bring to the boil, then reduce the heat and simmer over a low heat for 25 minutes, stirring occasionally. Serve with rice and a dollop of coconut yogurt.
