Ingredients
4 servings
2 Tbspcooking oil
1Red Chilli
Diced - finely
1Red Onion
Diced -finely
2 tinsBlack Beans
Drained
1 tinChickpeas
Drained
100mlwater
220gCherry Tomatoes
Halved
2Lime
1x Juiced/, 1x Juiced and Zest
15gDark Chocolate
Grated
1 Tbspsoy sauce
20gCoriander
Chopped
400gtinned chopped tomatoes
300gpearl barley
Vegan Yoghurt
To taste, or Sour Cream
Chilli Con Carne Seasoning
Instructions
Step 1
Heat up a deep sided frying pan over a medium heat & add the oil before cooking the onions for 5 mins or until soft, then add the chilli and half of the coriander
Step 2
Add the chickpeas and black beans followed by the water, soy sauce and juice of 1 lime
Step 3
Bring to a simmer then mix in the Puréety Chilli Con Carne seasoning. Place lid on pan and simmer for 20 minutes
Step 4
While this is simmering, make the pearl barley to the packet instructions then mix the zest and juice of 1 lime through and season with salt & pepper
Step 5
When the chilli is ready, mix through the grated chocolate, cherry tomatoes and chopped coriander
Step 6
Drizzle the vegan yoghurt or sour cream over the top.
