Roasted broccoli pasta

This is a very adaptable and easy pasta. Essentially, you need broccoli for crunch, onion for sweetness, and some kind of creamy binder for flavour and body : You can use parmesan + olive oil, mascarpone, ricotta, goats cheese, or eggy carbonara. You can fry the other vegetables if you like, but roasting the broccoli is key for a crunchy, slightly sweet caramelised flavour which will contrast wonderfully with the pasta, and avoid mushiness.

Instructions

Step 1
Preheat oven to 200C. Mix lemon zest and black pepper with oilve oil. Pour over onions broccoli and unpeeled garlic, and spread on a baking sheet. Sprinkle with salt and sugar. Roast for 30 mins in oven.

Meanwhile, cook pasta according to instructions, reserving some starchy cooking water.
Step 3
Peel the roasted garlic and give them a good bash on the head. Heat a pan on low. add 1 tbsp butter. Once sizzling, add the garlic and sun dried tomatoes and cook for about a minute. Add the herbs and lemon zest and give it a quick stir. Turn up the heat. Next, add the pasta and mascarpone and a squeeze of lemon juice. Stir through to heat for around 3 minutes. Add your reserved starchy pasta water to loosen up. Finally, tip with extra herbs and a some freshly cracked black pepper. To adjust the taste, add more lemon juice, salt, or garlic salt.

Alternatives for mascarpone: Red pesto, Green pesto, goat's cheese, ricotta, creme fraiche, olive oil + parmesan, or vegan cheeses. If your pasta sauce is a little too thick loosen it with milk or water.
Step 5
Feel free to omit the the onion and/or sun dried onion- the crispy broccoli is the essential here. You can experiment replacing with other vegetables. Roasted mushrooms are an excellent alternative! For more protein, add cooked shredded chicken, quorn pieces or fried pancetta
